Dice the onion and mince the garlic. Shred the cheese if not pre-shredded. Warm the tortillas in a dry skillet or microwave for 30 seconds to make them pliable.
Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 2-3 minutes until softened.
Add minced garlic and cook for 30 seconds until fragrant.
Add ground beef, breaking it up with a wooden spoon, and cook for 6-8 minutes until browned. Drain excess fat if necessary.
Stir in taco seasoning, pinto beans, and water. Simmer for 2-3 minutes until the sauce thickens slightly. Taste and adjust seasonings.
Lay a warm tortilla on a plate. Spread a thin layer of sour cream and guacamole if using down the center.
Layer the beef filling, shredded lettuce, salsa, and shredded cheese in a line down the center of the tortilla.
Fold the bottom of the tortilla up over the filling, then fold in the left and right sides tightly. Roll away from you to seal. Repeat with the second tortilla.
Serve warm with extra salsa, sour cream, and any additional toppings on the side.
