Beef Tips and Rice

Pat beef tips dry with paper towels. Dice onion, mince garlic, and cut carrot and potato into 1-inch chunks.
Heat olive oil in a large heavy-bottomed pot over medium-high heat. Working in batches, brown beef on all sides until deep golden (3–4 minutes per batch). Transfer to a plate.
In the same pot, sauté diced onion and minced garlic over medium heat for 2 minutes until fragrant. Return beef to pot.
Add beef broth, carrot chunks, potato chunks, salt, black pepper, and any fresh or dried herbs. Bring to a simmer, cover partially, and cook over medium-low heat for 30–35 minutes until beef is fork-tender and vegetables are soft.
While beef braises, bring 3 cups water (or broth) and 0.5 tsp salt to a boil in a separate pot. Add rice, stir, reduce heat to low, cover, and simmer for 15–18 minutes until tender and liquid is absorbed.
Fluff rice with a fork. Taste beef braising liquid and adjust seasoning. Spoon beef tips and vegetables over rice; drizzle with pan sauce or au jus if desired.
