Ingredients

4 servings
Salt0.5 tsp
Sugar2 tbsp
Eggs2 large
Butter4 tbsp melted
Milk1.5 cups
Mix-In Protein or Vegetable0.5 cup chopped (optional)
Mix-In Spice or Sweetener0.5 tsp (optional)
Topping Garnishfresh or as desired

Method

1

Preheat your waffle iron according to manufacturer instructions.

2

In a large bowl, whisk together all-purpose flour, baking powder, salt, and sugar.

3

In another bowl, whisk egg yolks with melted butter, milk, and vanilla extract until combined. Stir in any finely chopped mix-ins (spinach, mushrooms, cheese, or bacon).

4

In a third bowl, beat egg whites until stiff peaks form.

5

Pour wet ingredients into dry ingredients and stir until just combined—some lumps are okay. Gently fold in the beaten egg whites to preserve airiness.

6

Lightly oil or butter the waffle iron. Pour batter into the iron (about 0.75 cup per waffle), close, and cook until golden brown and crispy, 4–5 minutes per batch.

7

Transfer cooked waffles to a wire rack to keep them crispy while you finish the remaining batter.

8

Serve waffles warm topped with your choice of sauce (honey, maple syrup, chocolate ganache, or savory sauce), fresh fruit, nuts, whipped cream, or other garnishes.
