Big Mac Smash Tacos
Smashed beef patties with melted cheese, pickles, and special sauce folded in warm tortillas. Crispy-edged, handheld tacos with burger-inspired toppings and condiments.

Method
Divide ground beef into 8 equal portions; form thin, flat patties slightly wider than your tortillas (about 0.25 inch thick). Season both sides generously with salt and black pepper. Assemble toppings: chop pickles and onion, shred lettuce, slice tomato.
Heat oil in a cast-iron skillet or griddle over medium-high heat until smoking. Working in batches, lay patties directly on hot surface; do NOT move for 1.5–2 minutes until edges brown and release easily.
Flip patties; immediately top 4 of them with one slice of cheese each. Cook 1 minute more until cheese begins to melt. Remove all patties to a plate.
Stack a cheesed patty on top of a non-cheesed patty (cheese side in) to form a burger. Repeat with remaining patties to make 4 double-stacked patties. Smash down gently with spatula for 15 seconds to meld; remove from heat.
Warm tortillas in the same skillet 15 seconds per side. Spread 1 tbsp special sauce on each tortilla. Layer with pickles, red onion, lettuce, and tomato slice in the center.
Place one beef-and-cheese stack on each tortilla; fold sides up and serve warm.
