Pat chicken dry and cut into bite-sized pieces or thin strips. Season with paprika, garlic powder, salt, and black pepper.
Heat olive oil in a skillet over medium-high heat. Add chicken and cook, stirring occasionally, until golden and cooked through (8–10 minutes).
Pour buffalo sauce over the cooked chicken and toss to coat. Heat for 1–2 minutes until warmed through.
Mix mayonnaise with 1 tbsp buffalo sauce to make a spread. Divide between the two tortillas.
Layer lettuce, celery, red onion, and buffalo chicken on each tortilla.
Top with blue cheese crumbles if using. Roll each tortilla tightly, tucking in the sides. Serve warm.
