Chorizo & Plantain Skillet
A skillet dish combining spiced chorizo with caramelized plantains and a swappable vegetable base. Cooked in one pan, finished with optional toppings and sauce.

Peel and cube plantains into 1-inch pieces. Dice the base vegetable and onion. Mince garlic.
Heat oil in a large skillet over medium-high heat. Add chorizo, breaking it into small pieces with a wooden spoon. Cook until browned and rendered, 6–8 minutes. Transfer to a plate.
In the same skillet with chorizo fat, add onion and cook until softened, about 3 minutes. Add garlic and cook for 30 seconds.
Add base vegetable and plantain cubes. Season with salt and pepper. Cook, stirring occasionally, until plantains are tender and edges are caramelized, 12–15 minutes.
Return chorizo to the skillet and stir to combine. Cook for 1–2 minutes to warm through.
Drizzle with sauce if using. Top with fresh herb garnish and serve with lime wedges.
