Bolognese Beef Pasta

Dice onion and carrot into small, even pieces; mince garlic.
Heat olive oil in a large skillet over medium-high heat; add ground beef and cook, breaking it apart with a wooden spoon, until browned and no pink remains, 5–7 minutes. Drain excess fat if needed.
Add onion, carrot, and garlic to the meat; cook, stirring occasionally, until vegetables soften, about 5 minutes.
Stir in tomato paste and cook for 1 minute, coating all ingredients.
Pour in beef broth, stirring to combine. Bring to a simmer, then reduce heat to low and cook uncovered for 30–35 minutes, stirring occasionally, until sauce thickens and flavors meld. Season with salt and pepper.
Meanwhile, bring a large pot of salted water to a boil; add pasta and cook according to package directions until al dente. Drain well.
Divide pasta among bowls and spoon Bolognese sauce over the top. Garnish with parmesan and parsley if desired.
