Brown Beans

Rinse and drain the dried brown beans. Dice the onion and garlic. Prepare any optional vegetables by dicing or chopping. Measure out your chosen spices.
Heat the cooking fat in a large pot over medium heat. Add the diced onion and cook for 4–5 minutes until softened and fragrant.
Stir in the minced garlic and your chosen spice base. Toast for 30 seconds until aromatic.
Add the rinsed beans and broth. If using optional vegetables, add them now (except quick-cooking leafy greens). If using a sweetener or tomato paste, stir it in. Bring to a boil, then reduce heat and simmer uncovered for 30–40 minutes, stirring occasionally.
If adding optional protein (ground meat, sausage, or tofu), brown it separately in a skillet or add crumbled to the pot about 20 minutes before the beans finish cooking.
When the beans are tender, add your chosen acid (lime juice, vinegar, or lemon juice) and quick-cooking greens if using. Season generously with salt and pepper. Simmer for 2–3 more minutes.
Ladle into bowls or plates. Garnish with fresh herbs and any additional toppings. Serve warm.
