Method
Preheat oven to 425°F (220°C). Peel and cut sweet potato and other roasted vegetables into 1-inch cubes. Toss with 2 tbsp olive oil, salt, and pepper.
Spread vegetables on a sheet pan in a single layer. Roast for 20–25 minutes, stirring halfway, until tender and lightly caramelized.
If using broccoli or another vegetable with florets, add it to the pan in the last 12 minutes so it crisps without burning.
Meanwhile, cook your chosen grain according to package directions (or use pre-cooked grain for speed). Fluff with a fork and let cool slightly.
Divide cooked grain between serving bowls. Layer roasted vegetables, fresh greens, cherry tomatoes, and protein on top.
Drizzle with tahini-lemon dressing. Scatter seeds and fresh herbs over the top. Serve warm or at room temperature.
