Charred Broccoli Grain Bowl

Cut broccoli into florets (1½–2 inches each). Preheat oven to 425°F.
Cook grain base according to package directions; drain and set aside.
Toss broccoli with 1 tbsp olive oil, salt, and black pepper. Spread in a single layer on a sheet pan.
Roast for 20–25 minutes, stirring halfway through, until florets are charred at the edges and tender.
Warm or cook your chosen protein while broccoli roasts (reheat canned chickpeas in a pan, pan-sear tempeh, or grill salmon).
Divide cooked grain between bowls and top with charred broccoli, cooked protein, fresh vegetables, and herbs.
