Ingredients
Method
Cut cauliflower into 1½-inch florets and pat dry with paper towels.
In a large bowl, whisk together flour, baking powder, salt, and black pepper.
Add water to the flour mixture and stir until a smooth, thick batter forms (like pancake batter).
Toss cauliflower florets in the batter until evenly coated.
Preheat air fryer to 400°F for 3 minutes.
Arrange battered cauliflower in a single layer in the air fryer basket (work in batches if needed) and air-fry for 15–18 minutes, shaking the basket halfway through, until golden and crispy.
In a small bowl, whisk together buffalo sauce and melted butter.
Transfer cooked cauliflower to a large bowl and toss with buffalo-butter sauce until evenly coated.
Transfer to a serving platter and garnish with chopped green onions. Serve immediately with celery sticks and blue cheese dressing on the side.
Optional: toss in cooked protein (chicken, shrimp, or tempeh) before serving if making this a main dish.
