Preheat oven to 450°F. If using a pizza stone, place it in the oven now.
Heat 1 tbsp olive oil in a large skillet over medium heat. Add sliced red onion and cook, stirring occasionally, for 8–10 minutes until golden and caramelized. Season lightly with salt and pepper; set aside.
Ensure chicken is cooked, shredded or diced into bite-sized pieces, and ready to use.
Roll out or stretch pizza dough onto a pizza peel or baking sheet lined with parchment. Brush lightly with remaining olive oil.
Spread BBQ sauce evenly over the dough, leaving a ½-inch border for the crust.
Distribute shredded chicken evenly over the sauce.
Top with caramelized red onions, then sprinkle mozzarella and cheddar cheeses evenly.
Transfer pizza to the oven (place on the stone or bake sheet) and bake for 15–18 minutes until the crust is golden and cheese is melted and bubbling.
Remove from oven and garnish with fresh cilantro. Let cool for 2 minutes, slice, and serve.
