Buffalo Cauliflower Pizza
Crispy roasted cauliflower tossed in buffalo sauce atop a pizza crust. Topped with cheese, celery, and optional protein in a build-your-own format.

Method
Preheat oven to 425°F. Toss cauliflower florets with olive oil and salt; spread on a baking sheet in a single layer.
Roast cauliflower for 15 minutes until golden at the edges. Remove and toss with buffalo sauce.
Stretch or press pizza dough onto a pizza pan; poke with a fork to prevent large bubbles.
Spread a thin layer of mozzarella over the dough. Distribute buffalo cauliflower evenly, then scatter cooked chicken (if using), red onion, celery, and blue cheese on top.
Top with remaining mozzarella and parmesan. Bake at 425°F for 15–18 minutes until crust is golden and cheese is bubbly.
Remove from oven, scatter green onion over the top, and let cool 2 minutes before slicing.
