Burgoo is a slow-cooked stew with meat, vegetables, and beans simmered in broth until tender. Deep flavors develop through long cooking as ingredients meld into a thick, warming pot.

Cut meat into 1-inch cubes. Dice onion, carrot, and celery.
Transfer meat, broth, beans, onion, carrot, and celery to the slow cooker.
Stir in tomato paste, bay leaf, thyme, and Worcestershire sauce until combined.
Cover and cook on low for 4 hours or high for 2 hours until meat is tender.
Add optional vegetables (corn, okra, or green beans) if using; cook 30 minutes longer.
Remove bay leaf. Season with salt and black pepper to taste.
Ladle into bowls and serve hot.
