Cheeseburger Soup

Method
Dice the onion, celery, and potato into bite-sized pieces; mince the garlic; cook the bacon until crispy, then crumble and set aside.
Heat a large pot over medium-high heat and brown the ground beef, breaking it apart as it cooks, about 5 minutes; drain excess fat.
Add the onion, celery, and garlic to the pot; sauté until softened, about 3 minutes.
Pour in the beef broth and add the diced potato; bring to a simmer and cook until the potato is tender, about 12 minutes.
Stir in the ketchup, mustard, and Worcestershire sauce; season with salt and pepper to taste.
Reduce heat to medium-low and stir in the heavy cream; do not boil.
Add the shredded cheddar cheese in handfuls, stirring until fully melted and the soup is smooth and creamy, about 2 minutes.
Ladle into bowls and top with crumbled bacon and chopped green onion.
