Cajun Chicken Bowl
Seasoned chicken over rice with cajun spices, bell peppers, and onions. Served warm with a choice of vegetable sides and sauce.

Cut chicken breast into 1-inch cubes and mince garlic. Dice red onion and chop bell pepper. Slice okra into 1/4-inch rounds.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes per side until golden; set aside.
In the same skillet, add onion, bell pepper, and garlic. Sauté for 3-4 minutes until softened. Stir in okra and cook for 2 minutes more.
Return chicken to skillet. Sprinkle with cajun seasoning and stir well. Pour in chicken broth and simmer for 5 minutes until flavors meld. Stir in hot sauce if using.
Divide cooked rice between serving bowls. Top with chicken and vegetable mixture, including sauce.
Garnish with fresh green onions and serve warm.
