Burrito Meal Prep

Dice red onion and bell pepper. Chop cilantro. Cut avocado into slices. Have all toppings ready in separate bowls.
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the protein and cook until browned, about 8–10 minutes, breaking it up as it cooks.
Season with taco seasoning (or 2 tsp cumin, 1 tsp chili powder, 1/2 tsp garlic powder, 1/2 tsp oregano). Stir in cooked beans and warm through, about 3 minutes. Remove from heat.
If grains are not already cooked, prepare them while the protein cooks. Warm cooked rice or grain base gently in a separate pot or microwave.
Divide warm grain base among four bowls. Top with the seasoned protein-and-bean mixture.
Arrange raw vegetables (red onion, bell pepper), avocado, and cilantro on top. Drizzle with salsa, sour cream, and a squeeze of fresh lime juice.
Serve warm bowls with warm tortillas on the side for wrapping or mixing in. Customize each bowl with preferred toppings and salsa.
