Cajun Shrimp Dirty Rice
A one-pot Cajun dish combining seasoned rice with shrimp, aromatics, and optional proteins. Rice cooks with broth and vegetables, then shrimp finishes cooking on top for a warm, layered-flavor dish.

Method
Dice onion, celery, and bell pepper into roughly 0.5-inch pieces. Mince garlic. Peel and devein shrimp; pat dry.
Heat olive oil in a large skillet over medium-high heat. Add onion, celery, and bell pepper; cook 4–5 minutes until softened, stirring occasionally.
Stir in garlic and cook 30 seconds until fragrant. Add tomato paste and stir to coat vegetables, cooking 1 minute.
Sprinkle cajun seasoning and paprika over the vegetables; stir to combine.
Pour in vegetable broth and stir; bring to a boil. Add rice and stir once. Reduce heat to medium-low, cover, and simmer 18–20 minutes until rice is tender and liquid is mostly absorbed.
Nestle shrimp into the rice in a single layer. Cover and cook 3–4 minutes until shrimp are just opaque throughout, stirring gently to distribute.
Remove from heat. Stir in hot sauce if using. Taste and adjust salt. Fluff rice with a fork.
Divide among bowls or plates. Garnish with chopped green onion and serve warm.
