Cajun Shrimp Traybake

Preheat oven to 425°F. Pat shrimp dry with paper towels.
Cut bell pepper and onion into 1-inch chunks. Halve yellow squash lengthwise, then cut into 1-inch thick pieces. Trim okra and leave whole or halve if very large. Mince garlic.
On a large sheet pan, toss shrimp, bell pepper, onion, yellow squash, okra, and garlic with olive oil, cajun seasoning, and a pinch of salt. Spread in an even single layer.
Roast for 18–22 minutes until shrimp are opaque and pink throughout and vegetables are tender with lightly browned edges.
Transfer to a serving dish. Scatter fresh parsley over top and serve with lemon wedges on the side.
