Cheeseburger and Fries

Cut potatoes into fries or wedges of uniform size. Soak in cold water for 15 minutes if desired to reduce starch, then pat dry.
Form ground beef into a patty slightly larger than your bun (it will shrink). Season generously with salt and black pepper. Make a small indent in the center with your thumb to prevent bulging.
Heat oil in a skillet or deep pan to 350°F (175°C). Working in batches, fry potatoes for 10–12 minutes until golden and crispy, stirring occasionally. Transfer to a paper towel-lined plate and season with salt while hot.
Heat a grill or skillet over medium-high heat until very hot. Place patty on grill and cook without moving for 3–4 minutes until a brown crust forms. Flip once and cook another 3–4 minutes for medium doneness (160°F internal temperature).
In the final 30 seconds of cooking, place cheese slice(s) on the patty and cover with a lid or dome to melt.
Toast bread lightly if desired. Spread mayonnaise (or special sauce) on bottom bun. Layer patty with cheese, lettuce, tomato, and onion. Top with second slice of bread.
Serve burger immediately with hot fries on the side. Offer ketchup and additional condiments separately.
