Chicken Soup

Dice the onion and mince the garlic. Slice or dice the carrot and celery. Prepare your choice of starch and additional vegetables.
Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery. Sauté for 4–5 minutes until softened. Add minced garlic and cook for 1 minute more.
Pour in the chicken broth and bring to a boil. Add diced chicken and reduce heat to a simmer.
Simmer chicken for 12–15 minutes until cooked through. Add your choice of starch and any additional vegetables. Simmer for another 10–12 minutes until starch is tender.
Taste and adjust seasoning with salt and pepper. Stir in fresh herbs if using.
Ladle into bowls and serve hot. Garnish with additional fresh herbs or a drizzle of olive oil if desired.
