In a mixing bowl, combine cilantro, lime juice, minced garlic, olive oil, salt, and black pepper to form the marinade.
Pat chicken dry and place in a shallow dish. Pour marinade over chicken, turning to coat evenly. Refrigerate for at least 15 minutes or up to 12 hours.
Heat a grill or skillet over medium-high heat. Remove chicken from marinade, letting excess liquid drip off.
Grill or pan-sear chicken 6–8 minutes per side, until internal temperature reaches 165°F on a meat thermometer and juices run clear.
