Citrus Salmon Tray Dinner
Sheet pan salmon with roasted citrus, herbs, and swappable seasonal vegetables. Baked until salmon is flaky and vegetables are tender, ready in under 45 minutes.

Method
Preheat oven to 400°F. Line a sheet pan with parchment paper.
Arrange zucchini, yellow squash, red onion, and minced garlic on the sheet pan. Drizzle with 2 tbsp olive oil, season with salt and pepper, and toss to coat.
Roast vegetables for 12 minutes until they begin to soften.
Remove pan from oven. Push vegetables to the sides and arrange salmon fillets skin-side down in the center.
Rub salmon with 1 tbsp olive oil. Layer lemon and orange slices over each fillet. Top with rosemary sprigs. Season with salt and pepper.
Return to oven and bake for 12–15 minutes until salmon is opaque and flakes easily with a fork.
Transfer salmon and vegetables to plates. Garnish with fresh parsley and sesame seeds if desired.
