Lowcountry Boil

Quarter potatoes and halve onion; cut corn into 3-inch pieces; trim okra; smash garlic cloves; have lemon halved and bay leaves ready.
Pour vegetable broth into a large stockpot; add Old Bay seasoning, bay leaves, smashed garlic, and halved onion; bring to a boil over high heat.
Add sausage rounds and potato pieces; return to a boil and cook 10 minutes until potatoes begin to soften.
Add corn pieces and okra; cook 5 minutes until corn is tender-crisp.
Add crab; cook 8–10 minutes until crab shells are bright orange-red and meat cooked through; do not overcook.
Squeeze lemon juice into the pot; taste and adjust seasoning if needed.
Ladle into bowls with broth, top with chopped parsley, and serve hot.
