Lemon Garlic Salmon

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Pat salmon fillets dry with paper towels. Arrange on the prepared baking sheet, skin-side down if using skin-on.
In a small bowl, whisk together minced garlic, lemon juice, olive oil, and half the fresh parsley. Season the mixture with salt and pepper.
Prepare your choice of roasted vegetables on the baking sheet around the salmon, tossing lightly with a pinch of salt and pepper.
Drizzle the lemon-garlic sauce over each salmon fillet. Top with lemon slices. If using red onion, scatter around the pan.
Bake for 12–15 minutes, until the salmon is opaque and flakes easily with a fork (internal temperature 145°F/63°C).
Remove from oven and garnish with remaining fresh parsley. Serve immediately while hot, with the roasted vegetables and pan juices spooned over the top.
