Gambas al Ajillo
Spanish garlic shrimp cooked in olive oil with garlic, red pepper flakes, and optional paprika. Shrimp are seared until pink and tender in a fragrant, garlicky oil.
Ingredients
Method
Peel and devein shrimp if not already done. Pat dry with paper towels. Mince garlic finely.
Heat olive oil in a large skillet over medium-high heat. Add minced garlic and red pepper flakes; sauté for 30 seconds to 1 minute until fragrant, stirring constantly to prevent burning.
Increase heat to high. Add shrimp in a single layer and season with salt and paprika. Sear for 1.5 to 2 minutes without stirring, then flip and cook for another 1.5 to 2 minutes until shrimp are pink and opaque.
Remove from heat. Stir in fresh parsley if using. Divide into bowls and serve immediately with lemon wedges on the side.
