High Protein Pasta Salad
A chilled pasta salad combining cooked pasta, protein, and fresh vegetables with a tangy dressing. Mixed together and served cold or at room temperature.

Method
Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package directions. Drain in a colander and rinse with cold water until cooled completely.
While pasta cools, dice cucumber and cherry tomatoes. Thinly slice red onion and mince fresh garlic. Chop fresh parsley and have protein ready.
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper until emulsified.
Place cooled pasta in a large mixing bowl. Add diced protein, cherry tomatoes, cucumber, red onion, and fresh parsley.
Pour dressing over the salad and toss gently until all ingredients are evenly coated. Top with grated Parmesan cheese if using.
Serve immediately at room temperature or refrigerate for up to 3 days covered. Toss again before serving and adjust seasoning as needed.
