Ingredients
Method
Pat salmon dry with paper towels and place skin-side down on a lined sheet pan. Season lightly with salt.
In a small bowl, whisk together honey, sriracha, soy sauce, and lime juice until smooth.
Prepare all vegetables: slice cucumber, shred red cabbage, ensure edamame are shelled and cooked, slice green onion.
Preheat oven to 400°F.
Brush salmon fillets with olive oil, then coat generously with the honey sriracha glaze.
Roast salmon for 12–15 minutes until flesh is opaque and flakes easily at the thickest point (internal temp 145°F).
While salmon cooks, warm or serve the cooked grain base in individual bowls.
Divide warm grain between two serving bowls.
Arrange cucumber, red cabbage, and edamame around the grain in each bowl.
Top each bowl with one roasted salmon fillet.
Sprinkle sesame seeds and green onion over the top. Serve warm.
