Hot Brown
Open-faced sandwich of toasted bread, protein, and melted cheese sauce, finished under the broiler. Topped with crispy bacon and fresh garnish.

Preheat the broiler to high. Cook bacon in a skillet over medium-high heat until crispy, about 5 minutes; crumble and set aside. Slice tomato and chop parsley; set aside.
Place bread slices on a baking sheet. Toast under the broiler for 1–2 minutes per side until light golden; remove and arrange on a serving platter.
Melt butter in a small saucepan over medium heat. Whisk in flour to form a paste and cook for 1 minute, stirring constantly.
Gradually whisk in warm milk, stirring to prevent lumps. Simmer for 2–3 minutes until the sauce begins to thicken.
Remove from heat and stir in cheese until melted and smooth. Season with salt and white pepper.
Divide turkey among the toasted bread slices. Pour warm cheese sauce evenly over each piece, covering the edges.
Place the baking sheet under the broiler for 2–3 minutes, watching carefully, until the cheese sauce bubbles and browns lightly.
Transfer to plates and garnish with crumbled bacon, tomato slices, and fresh parsley. Serve immediately.
