Italian Beef Sandwich
Thinly sliced seasoned beef on a crusty roll with sautéed peppers, onions, and garlic. Served hot with optional dipping gravy and melted cheese.

Slice beef thinly against the grain and set aside. Slice bell peppers into strips and onions into half-moons. Mince garlic.
Heat olive oil in a large skillet over medium-high heat. Working in batches, sear beef slices 1–2 minutes per side until lightly browned; transfer to a plate.
In the same skillet, sauté peppers and onions over medium heat for 8–10 minutes until softened and starting to caramelize. Add garlic and cook 1 minute more.
Return beef to the skillet along with Italian seasoning, salt, and pepper. Pour in beef broth and simmer for 10–15 minutes, stirring occasionally, until broth reduces slightly and beef is heated through.
Lightly toast sandwich rolls if desired. Layer each roll with sliced beef and vegetable mixture. Top with provolone cheese if using, and giardiniera if desired.
Serve sandwiches hot with warm au jus on the side for dipping.
