In a mixing bowl, combine minced garlic, olive oil, oregano, lemon juice, paprika, salt, and black pepper to create the marinade.
Add your chosen protein to the marinade, tossing to coat evenly. Let sit for at least 15 minutes (or up to 24 hours refrigerated for deeper flavor).
While the protein marinates, prepare the toppings: slice cucumber, dice red onion and tomato, chop fresh parsley. Set aside.
Heat a large skillet over medium-high heat. Working in batches if needed, cook the marinated protein until golden brown and cooked through (approximately 8–12 minutes depending on thickness and your chosen meat). Use a meat thermometer to verify doneness: 165°F for poultry, 160°F for ground meats, or 145°F for lamb or beef if preferred medium-rare.
Warm the pita bread in the same skillet for 30 seconds per side, or wrap in foil and warm in a 350°F oven for 3–5 minutes.
Place a warm pita on a plate. Spread a generous dollop of tzatziki sauce onto the bread.
Layer the cooked protein down the center of the pita, then top with sliced cucumber, red onion, diced tomato, and fresh parsley.
Fold or wrap the pita around the filling and serve immediately while warm. Offer extra tzatziki on the side if desired.
