Italian Sausage Pasta
Pasta with browned Italian sausage, tomato sauce, and aromatics. Finished with fresh herbs and cheese.

Bring a large pot of salted water to a boil for the pasta.
Heat olive oil in a large skillet over medium-high heat. Add the sausage, breaking it into small pieces with a wooden spoon, and cook for 6–8 minutes until browned. Pour off excess fat if needed.
Add the diced onion and cook for 3–4 minutes, stirring occasionally, until softened. Add the minced garlic and cook for 1 minute until fragrant.
Pour in the marinara sauce and stir to combine. Reduce heat to low and simmer gently for 8–10 minutes, stirring occasionally.
While the sauce simmers, add the pasta to the boiling water. Cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain in a colander.
Add the cooked pasta to the sausage sauce. Toss gently, adding reserved pasta water a little at a time if the mixture is too thick. Season with salt and black pepper to taste.
Divide among bowls. Top with grated Parmesan cheese and fresh chopped parsley. Serve immediately.
