Dice the onion and bell pepper. Mince the garlic. Slice the zucchini into half-moons. Halve the cherry tomatoes. If using sausage links, remove and discard casings.

Heat olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it into bite-sized pieces with a wooden spoon, until browned and cooked through, about 8–10 minutes. Drain excess fat if needed.

Add the diced onion and garlic to the skillet. Stir and cook until the onion is softened and fragrant, about 2–3 minutes.

Stir in the bell pepper and zucchini. Cook, stirring occasionally, until the vegetables begin to soften, about 6–8 minutes.

Add the cherry tomatoes, Italian seasoning, salt, and black pepper. Stir well and cook until the tomatoes soften and release their juices, about 3–4 minutes.

Taste and adjust seasoning. If using marinara sauce, stir it in and warm through for 1–2 minutes. Serve hot, topped with grated Parmesan cheese if desired.
