Ingredients

4 servings
Soy sauce3 tbsp
Ginger, fresh2 tbsp minced
Cucumber1 cup sliced
Red onion1/2 cup thinly sliced
Kimchi1/2 cup
Green onion2 stalks chopped
Lime1 wedge

Method

1

In a bowl, combine soy sauce, ginger, garlic, sesame oil, and brown sugar; whisk until sugar dissolves.

2

Add thinly sliced beef to the marinade; toss to coat evenly. Let sit at room temperature for 15 minutes, or refrigerate up to 24 hours.

3

Prepare cucumber slices, red onion, and kimchi; place in separate bowls for assembly.

4

Heat a large grill or skillet to medium-high heat. Working in batches, sear marinated beef 2–3 minutes per side until caramelized and cooked to desired doneness; do not overcrowd the pan.

5

Divide warm cooked rice evenly among 4 bowls.

6

Top each bowl with a portion of cooked beef, then arrange cucumber, red onion, and kimchi in sections around the rice.

7

Sprinkle sesame seeds and green onion over each bowl; serve with lime wedges on the side.
