Korean Beef Taco

Mince ginger and garlic. Slice green onions. Chop kimchi into bite-sized pieces.
Whisk soy sauce, rice vinegar, minced ginger, minced garlic, honey, and sesame oil in a small bowl.
Heat a skillet over medium-high heat. Brown ground beef, breaking it into crumbles as it cooks, until no pink remains, about 5–6 minutes. Drain excess fat if needed.
Pour glaze over cooked beef and toss to coat evenly. Simmer 2 minutes until sauce thickens slightly.
Warm tortillas in a dry skillet or directly over a flame for 10 seconds per side.
Place a tortilla on a plate. Spoon glazed beef into the center, top with kimchi, green onion, and sesame seeds. Serve immediately.
