Korean Spicy Pork Lettuce Wrap
Seasoned ground pork cooked with gochujang, garlic, and ginger, served in crisp lettuce leaves. Diners assemble wraps at the table with choice of protein, vegetables, and sauce.

Separate and rinse lettuce leaves; arrange on a platter. Julienne cucumber and place in a small bowl. Mince garlic and ginger. Slice green onion, keeping white and green parts separate.
Heat sesame oil in a large skillet over medium-high heat. Add ground pork and cook, breaking it into small pieces, until mostly opaque, about 4–5 minutes.
Stir in minced garlic and ginger; cook for 1 minute until fragrant.
Add gochujang sauce, soy sauce, and water. Stir well and simmer for 4–5 minutes until the pork is cooked through and the sauce coats the meat. Taste and adjust seasoning as needed.
Fold in the white parts of the green onion; remove from heat.
Transfer pork mixture to a serving bowl. Top with reserved green onion parts and sesame seeds. Serve with lettuce leaves, cucumber, and any preferred condiments on the side. Diners place a spoonful of pork on a lettuce leaf, add cucumber and other garnishes, and roll to eat.
