Lasagna Roll Ups
Rolled pasta tubes filled with cheese and protein, baked in tomato sauce. Individual portions assembled by filling, rolling, and baking in sauce until bubbly.

Bring a large pot of salted water to boil. Add pasta sheets one at a time and cook until al dente, about 9 minutes. Drain in colander and lay flat on parchment to cool.
In a mixing bowl, combine ricotta, 1 cup mozzarella, parmesan, egg, spinach if using, italian seasoning, salt, and pepper. Mix until uniform.
Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook until softened, about 4 minutes. Add garlic and cook 1 minute more.
Add ground turkey, breaking it into small pieces with a wooden spoon. Cook until no longer pink, about 8 minutes. Drain excess fat if needed. Stir in marinara sauce and simmer 5 minutes. Taste and adjust seasoning.
Preheat oven to 375°F. Spread a thin layer of meat sauce on the bottom of a 9x13 baking dish.
Place one cooled pasta sheet on a flat work surface. Spread 3 tablespoons of ricotta filling along one long edge, leaving 1 inch at the sides. Add a spoonful of meat sauce on top if desired.
Roll the pasta sheet tightly toward the opposite edge, creating a cylinder. Place seam-side down in the baking dish. Repeat with remaining pasta and filling.
Pour remaining meat sauce over the roll ups. Sprinkle remaining 0.5 cup mozzarella evenly on top.
Cover baking dish with foil. Bake 20 minutes covered, then remove foil and bake another 15 minutes until sauce bubbles at edges and cheese browns slightly.
Let rest 5 minutes before serving. Serve warm with extra parmesan and fresh basil if desired.
