Lighter Carbonara Spaghetti
Creamy pasta dish made with eggs, cheese, and cured meat over tender noodles. Tossed warm so the egg sauce coats each strand without cream or heavy additions.

Bring a large pot of salted water to a boil. Whisk together eggs and grated cheese in a small bowl until well combined; set aside.
Heat olive oil in a large skillet over medium heat. Add diced pork and cook until edges are crisp and fat is rendered, 4–5 minutes. Stir in minced garlic and cook 30 seconds until fragrant. Remove from heat.
Add pasta to boiling water and cook until al dente according to package directions. Reserve 1 cup pasta water, then drain pasta in a colander.
Add hot drained pasta to the skillet with pork and garlic off heat. Toss constantly while slowly pouring the egg mixture over the pasta, stirring until the eggs are creamy and coat every strand, 1–2 minutes. If the mixture seems dry, add pasta water 2 tbsp at a time until silky.
Season with black pepper and salt to taste. Divide among bowls and top with fresh herbs.
