Manakish

Method
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.
If making herb-blend topping: combine zaatar, sesame seeds, and finely diced onion in a bowl with 2 tbsp olive oil until well mixed.
If making cheese topping: mix feta cheese, cream cheese, and fresh parsley in a bowl.
If making meat topping: cook ground meat in a skillet over medium-high heat for 5–7 minutes until browned, breaking it apart as it cooks. Stir in minced garlic, onion powder, and garam masala; cook 1 minute more. Transfer to a bowl and let cool slightly.
Place pita breads flat on the baking sheet. Brush the top surface of each with olive oil.
Spread or distribute your chosen topping (herb blend, cheese mixture, or spiced meat) evenly over each oiled pita, leaving a small border.
Bake for 10–12 minutes until the edges are golden and crispy and any cheese is melted, or meat is hot throughout.
Remove from oven and let cool for 1 minute. Garnish with pine nuts and/or sumac if desired. Cut into quarters and serve warm or at room temperature.
