Maple Glazed Salmon
Pan-seared salmon fillet with a maple-sweetened glaze and roasted seasonal vegetables. Quick weeknight entrée finished in the oven.

Preheat oven to 400°F. Pat salmon fillets dry with paper towels and season both sides with salt and pepper.
Toss vegetables with 1 tbsp olive oil, minced garlic, salt, pepper, and fresh or dried herbs. Spread on a sheet pan.
In a small bowl, whisk together maple syrup, Dijon mustard, and lemon juice; set aside.
Heat 1 tbsp olive oil in a cast-iron skillet or oven-safe pan over medium-high heat. Once shimmering, place salmon fillets skin-side up and sear 3 minutes until the bottom is opaque.
Brush the top of each salmon fillet with the maple glaze. Transfer skillet to the preheated oven.
Roast salmon and vegetables together until the fish reaches 145°F internal temperature, 8–10 minutes. Vegetables should be tender and lightly caramelized.
Divide roasted vegetables among plates and top each with a glazed salmon fillet. Drizzle any pan juices over the top.
