Orzo Shrimp Primavera
Orzo pasta with shrimp and swappable seasonal vegetables in a light sauce. Tossed and served warm in one pan.

Method
Bring a large pot of salted water to a boil. Cook orzo according to package directions until al dente; drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Add garlic and cook for 30 seconds until fragrant.
Add shrimp and cook for 2–3 minutes per side until pink; transfer to a plate.
In the same skillet, add diced zucchini and bell pepper; sauté for 4–5 minutes until softened. Stir in cherry tomatoes and cook for 2 minutes.
Pour in vegetable broth and lemon juice; bring to a simmer. Return shrimp to the pan and add cooked orzo; toss gently to combine.
Cook for 1–2 minutes until warmed through. Remove from heat and stir in half the Parmesan and the fresh parsley.
Divide among bowls, top with remaining Parmesan, season with salt and black pepper, and serve immediately.
