Pancake Cereal
Bite-sized pancake puffs served with swappable sweet or savory toppings and sauces. Baked or pan-fried until golden, then topped and eaten like cereal with a spoon.
Ingredients
Method
Whisk together flour, sugar, baking powder, and salt in a bowl.
In another bowl, beat egg and combine with milk and melted butter.
Fold wet ingredients into dry until just combined; do not overmix.
Heat a non-stick skillet over medium-low heat or preheat a baking sheet in a 375 °F oven.
Drop batter by small spoonfuls (about 1 tbsp each) onto the skillet or sheet, forming 1-inch puffs.
Pan-fry 2–3 minutes per side until golden brown, or bake 10–12 minutes until puffed and firm.
Transfer warm pancake puffs to a bowl.
Top with chosen fruit, nuts, sauce, and sweetener.
Pour liquid component over top and serve immediately with a spoon.
