Preheat oven to 375°F (190°C). Lightly oil a 9x13 baking dish.
Bring a large pot of salted water to a boil. Cook pasta until just al dente (2 minutes less than package instructions), then drain well.
In a large bowl, whisk together ricotta, 1 cup mozzarella, 0.25 cup parmesan, egg, salt, and black pepper.
Spread a thin layer of marinara sauce on the bottom of the prepared baking dish.
Combine the cooked pasta with the remaining sauce in the pot, then transfer to the baking dish.
Drop spoonfuls of the ricotta mixture over the pasta and gently fold to distribute.
Top with the remaining 1 cup mozzarella and 0.25 cup parmesan.
Cover with foil and bake for 20 minutes, then remove foil and bake for 15 minutes until the top is golden and bubbling at the edges.
Let rest for 5 minutes, sprinkle with fresh parsley if desired, and serve hot.
