Puffy Tacos

Brown your chosen protein in a skillet over medium-high heat, breaking it apart as it cooks. Once cooked through, stir in the taco seasoning and a few tablespoons of water. Simmer 2–3 minutes until seasoning coats the meat. Keep warm on low heat.
Prepare all toppings: shred lettuce, dice tomatoes and onion, chop cilantro, and cut lime into wedges. Arrange toppings in small bowls for easy assembly.
Heat 2–3 inches of oil in a deep skillet to 350°F. Test with a thermometer; oil is ready when a small piece of tortilla sizzles and puffs immediately.
Carefully slide one corn tortilla into the hot oil. It should immediately puff and rise. Using tongs, fold it in half gently (do not fully crease it—just guide it into a taco shape while it fries).
Fry 1–2 minutes per side until golden and crispy. The tortilla should feel light and hollow. Remove with a slotted spoon and drain on paper towels. Repeat with remaining tortillas.
Fill each warm puffy taco shell with seasoned protein, then layer with cheese, lettuce, tomato, onion, and cilantro.
Serve immediately with salsa, sour cream, and lime wedges on the side. Eat while the shells are still crispy.
