Queso Dip

Shred the cheddar cheese if not already shredded. Finely dice the roasted red peppers. Slice the green onion and mince the jalapeño, removing seeds if desired.
Combine cumin, garlic powder, salt, and black pepper in a small bowl.
In a medium saucepan over medium-low heat, add the cream cheese and milk. Stir frequently until the cream cheese is mostly softened, about 2–3 minutes.
Gradually add the shredded cheddar cheese in batches, stirring continuously until each batch melts and the mixture is smooth. Do not boil.
Stir in the roasted red peppers, jalapeño, green onion, and the spice mixture. Fold gently until combined and heated through, about 2 minutes.
Transfer to a serving bowl. Serve warm with tortilla chips or bread for scooping.
