Sesame Noodle Salad
A chilled noodle salad combining cooked noodles, sesame-based dressing, fresh vegetables, and protein in a single bowl. Toss together and serve cold or at room temperature.

Bring a large pot of water to a boil. Add noodles and cook until tender according to package directions. Drain and rinse under cold water until completely cooled. Set aside.
Slice or julienne cucumber, thinly slice red cabbage, julienne carrot, and slice green onion. Gather all vegetables in a large bowl.
In a small bowl, whisk together tahini, rice vinegar, soy sauce, minced ginger, minced garlic, and honey until smooth. Thin with water if too thick (dressing should be pourable but not watery). Drizzle in sesame oil and whisk to combine.
Add cooled noodles and protein (if using) to the bowl with vegetables. Pour dressing over and toss gently until all ingredients are evenly coated.
Divide among serving bowls. Garnish with remaining sesame seeds and sliced green onion. Serve chilled or at room temperature.
