Shawarma Plate

Method
Slice the protein (chicken, lamb, turkey, or tempeh) into thin strips or bite-sized pieces. Pat dry to help browning.
Dice the cucumber and tomato, thinly slice the red onion, and chop the fresh parsley. Set vegetables aside on a serving platter.
Toss the protein strips with the shawarma spice blend and olive oil in a bowl. Let sit 5 minutes if time allows.
Heat a skillet or grill pan over medium-high heat. Cook the seasoned protein 10–15 minutes, stirring occasionally, until caramelized and cooked through. Remove and keep warm.
Warm the pita bread or tortillas. Spread a generous layer of tahini-lemon sauce on each bread.
Layer the warm cooked protein down the center, then top with cucumber, tomato, and red onion.
Garnish with fresh parsley, a pinch of sumac or paprika, and pomegranate seeds or pistachios. Drizzle with extra tahini sauce or lemon juice.
Fold the bread around the fillings and serve immediately, encouraging diners to customize with extra toppings.
