Shrimp Stir Fry

Combine soy sauce, rice vinegar, honey, and sesame oil in a small bowl; set aside.
Pat shrimp dry with paper towels and have all vegetables cut and ready.
Heat vegetable oil in a large wok or skillet over high heat until shimmering.
Add shrimp in a single layer and cook 2–3 minutes until pink on one side; flip and cook 1–2 minutes more. Transfer to a plate.
Add garlic, ginger, and the white parts of green onion to the same wok; stir-fry 30 seconds until fragrant.
Add red onion and bell peppers; stir-fry 2–3 minutes. Add broccoli and cook 3–4 minutes until tender-crisp.
Return shrimp to the wok, pour in the sauce, and toss to coat. Cook 1–2 minutes until heated through.
Garnish with green onion tops and sesame seeds. Serve immediately over rice, noodles, or on its own.
