Smoked Paprika Salmon Sheet Pan
Sheet pan salmon roasted with smoked paprika and seasonal vegetables. One-pan dinner baked until the fish is cooked through and vegetables are tender.

Preheat oven to 400°F (200°C). Arrange zucchini, red onion, and cherry tomatoes on a large sheet pan, spreading them into a single layer.
Drizzle vegetables with 1.5 tbsp olive oil, 1 tsp salt, and 0.25 tsp black pepper. Toss to combine.
In a small bowl, mix smoked paprika, minced garlic, remaining 1.5 tbsp olive oil, and 0.25 tsp black pepper into a paste.
Roast vegetables for 10 minutes at 400°F.
Remove sheet pan from oven. Push vegetables toward the sides and arrange salmon fillets skin-side down in the center, spacing them apart.
Spread smoked paprika paste evenly over each salmon fillet. Arrange lemon slices on top of the fillets.
Return to oven and bake for 10–12 minutes, until salmon is opaque at the thickest point and flakes easily with a fork.
Transfer to serving plates, dividing salmon and vegetables evenly. Garnish with fresh parsley if desired.
