Remove brisket from cooler 1–2 hours before smoking to bring closer to room temperature, ensuring even cooking.
Pat brisket dry with paper towels. Trim excess fat from the fat cap to about 1/4 inch, leaving enough for flavor and moisture.
Combine paprika, garlic powder, onion powder, brown sugar, salt, and black pepper in a small bowl to make your dry rub.
Generously coat the entire brisket with the dry rub, pressing gently so it adheres. Apply to all sides and edges evenly.
Set up your smoker for low-and-slow cooking at 225–250°F. Use hardwood charcoal and add soaked wood chips (hickory, oak, or mesquite) to create steady smoke.
Place brisket fat-side up on the smoker grate. Insert a meat thermometer in the thickest part of the flat without touching bone.
Smoke undisturbed for 4–5 hours at 225–250°F, maintaining consistent temperature and smoke. Do not open the lid frequently.
Mix beef broth with apple cider vinegar (if using). Every hour after the first 4, spritz the brisket lightly with this mixture to keep it moist.
Once the bark (outer crust) is dark mahogany and the brisket reaches an internal temp of 160–165°F (usually around 8–9 hours), wrap it tightly in butcher paper. This is the 'Texas crutch.'
Return wrapped brisket to smoker and continue cooking at 225–250°F until the internal temperature reaches 200–205°F in the thickest part (typically 4–6 more hours). The meat should probe tender like butter.
If using a finishing glaze or sauce (BBQ sauce, honey-based glaze, or molasses), unwrap the brisket during the last 45 minutes of cook time and brush it on evenly.
Remove brisket from smoker and let it rest wrapped in butcher paper for at least 20–30 minutes (up to 1 hour). This allows juices to redistribute and muscles to relax.
Unwrap and place on a cutting board. Slice against the grain with a sharp knife, starting at the thin flat end, then the thick point. Serve with au jus, horseradish sauce, or your preferred condiment.
